Roast Tomatoes, onion, chilis and garlic for the sauce with olive oil and seasoning. 400 deg F 20 mins. Let cool.
Blend and add cilantro (with stalks) salt and pepper a little oil, cumin and 1/2 c water.
Simmer the sauce for a while to cook out.

Saute green peppers and onion

Add beans to a large bowl and mash with potato mashger slightly. Add salt pepper a little olive oil, cheese, some cilantro and suated peppers and onion. Mix.

add 1/2 sauce to oven proof dish. Form enchiladas and put in. Add rest of sauce on top. sprinkle cheese and cover.

Bake for 30 mins at 350 deg F. Uncover and another 10 mins. Sprinkle cilantro and salsa on top to serve

Inspired by Jamie Oliver recipe - but modified.
Can use feta OR aged cheddar
